Summer is here and if I ask you, do you like to roam out in summer days? Surely, your answer will relate to mine. I only love summer when I was in school after all long summer holidays was the best part of that time. But, today I really hate the season where I have to go office to work all day.

It’s March and already we are feeling the hot winds hitting our face. But, thanks to the yummy summer salad that always come as a rescue to refresh my body and soul with the goodness of a bowl of veggies.

1. Poppy Seeds with Pomegranate over Cucumber and Corn Salad

  • Kirby (pickling) cucumbers, thinly sliced into rounds
  • 1 cup cooked corn kernels (fresh or canned)
  • 1/4 cup pomegranate seeds
  • 1 tablespoon poppy seeds
  • 3 tablespoons rice vinegar

  • 1 tablespoon extra-virgin olive oil
  • 1/4 teaspoon toasted sesame oil
  • 1/2 teaspoon sugar
  • Kosher salt, to taste

  • 1 pound frozen, fully cooked medium shrimp, thawed
  • 4 cups seedless watermelon, cut into bite-size pieces

  • 2 small yellow squash (about 5 oz.), thinly sliced
  • 2 nectarines, coarsely chopped
  • 1/3 cup coarsely chopped fresh flat-leaf parsley

  •  1 ¼ pounds boneless, skinless chicken breasts (or thighs)
  • ¼ cup + 2 tablespoons freshly squeezed lime juice
  • 2 tablespoons olive oil
  • 1 teaspoon EACH: garlic powder AND salt
  • ½ teaspoon chipotle chili powder
  • 4 tablespoons chopped cilantro, divided
  • 1 large red pepper, thinly sliced
